Coffee Cupping: Train Your Palate Like a Pro

Coffee Cupping: Train Your Palate Like a Pro

What is Coffee Cupping?

Coffee cupping is the industry-standard method professionals use to evaluate coffee quality and flavor. Think of it as a wine tasting, but for coffee beans . It helps you discover what makes each coffee unique from fruity Ethiopian beans to chocolatey Latin American roasts.

Why it’s trending right now: Coffee lovers are moving beyond just “drinking coffee” to truly understanding it. Cupping lets you explore flavor notes, compare origins, and appreciate the craft behind every bean.

What You’ll Need

  • 2-4 different coffees (whole bean, different origins)
  • Coffee grinder (burr grinder preferred)
  • Scale (optional but helpful)
  • Hot water (just off the boil, 93°C/200°F)
  • Small bowls or mugs (one per coffee, 150-200ml capacity)
  • Cupping spoons (wide, rounded heads like soup spoons)
  • Timer
  • Tasting notes sheet (or notebook)

Step-by-Step Cupping Guide

Step 1: Smell the Dry Grounds (Fragrance)

Grind beans to a coarse, breadcrumb-like texture. Place about 8-10 grams in each bowl. Smell the dry coffee, what do you notice? Chocolate, nuts, flowers, spice?

Step 2: Add Hot Water

Pour 150-180ml of hot water over each coffee sample. Start your timer. The grounds will “bloom” and form a crust on top .

Step 3: Break the Crust (Wet Aroma)

After 4 minutes, use your spoon to gently stir and break the crust. This is the most important aromatic moment. Stick your nose close and inhale deeply. Rinse your spoon between each cup to avoid cross-contamination .

Step 4: Skim and Cool

Remove floating grounds and foam. Let the coffee cool for about 8-10 minutes to around 70°C for optimal flavor release .

Step 5: Taste with The Slurp

Scoop a spoonful and slurp powerfully, this aerates the coffee across your entire palate. Let it coat your tongue, then spit or swallow (spitting keeps your taste buds fresh for more samples) .
