Step-by-Step Cupping Guide
Step 1: Smell the Dry Grounds (Fragrance)
Grind beans to a coarse, breadcrumb-like texture. Place about 8-10 grams in each bowl. Smell the dry coffee, what do you notice? Chocolate, nuts, flowers, spice?
Step 2: Add Hot Water
Pour 150-180ml of hot water over each coffee sample. Start your timer. The grounds will “bloom” and form a crust on top .
Step 3: Break the Crust (Wet Aroma)
After 4 minutes, use your spoon to gently stir and break the crust. This is the most important aromatic moment. Stick your nose close and inhale deeply. Rinse your spoon between each cup to avoid cross-contamination .
Step 4: Skim and Cool
Remove floating grounds and foam. Let the coffee cool for about 8-10 minutes to around 70°C for optimal flavor release .
Step 5: Taste with The Slurp
Scoop a spoonful and slurp powerfully, this aerates the coffee across your entire palate. Let it coat your tongue, then spit or swallow (spitting keeps your taste buds fresh for more samples) .
